NEWS FLASH!  A new University of Maryland study confirms that microgreens possess higher nutritional densities. Vitamin A, Vitamin K, Vitamin C and Vitamin E have been found to be two to three times higher in microgreens than their mature counterparts and in general Microgreens have a considerably higher concentrations of vitamins and carotenoids.   Journal of Agricultural and Food Chemistry article "Assessment of Vitamin and Carotenoid Concentrations of Emerging Food Products: Edible Microgreens"  states "...in comparison with nutritional concentrations of mature leaves, the microgreen cotyledon leaves possessed higher nutritional densities"!
